Severe Weather & Peppermint Patties

I have a confession…
I love severe weather.

I love the idea of hunkering down and riding out a storm. I inherited that from Daddy Boy. When we were little he {and mom} both drove Jeep Grand Wagoneers and they drove them because they had 4 wheel drive and we mostly lived where snow was inevitable. Mom’s was white {Jill} and Daddy Boy’s was black {Jack}. And Jack and Jill could climb hills to fetch stranded motorists in snow storms, which I’m pretty sure is why dad bought them.  I have such fond memories of my dad loading us into his Wagoneer after a big snowfall, he’d always bring a chain and we’d go on a search for stranded motorists. Then we’d get back home and Mom would have hot chocolate and buttered toast for us {mmm… you should try it} and Daddy Boy would get suited up in his snow gear, and camo ski mask and crank up the John Deere riding lawn mower that had a snow blower attachment mounted on the front. He would leave for hours, scraping every person’s driveway on our street. Anyway…  I love severe weather, not the kind that is super severe and hurts people, just the mild kind that gets kids out of school and makes people turn on the weather channel… and guess what, we’ve had no severe weather and I dare say, I might even like hearing about severe weather more than I like experiencing it. I’ve been living vicariously through my family that live in Illinois. And I’ve especially enjoyed the play by plays from Daddy Boy and Cousin who both rode it out in Chicago.

So, in honor of snow storms and the month of February I made peppermint patties with pink peppermint!

Now, I won’t lie… I thought they were going to be super easy, which they were…. u  n  t  i  l,  I got to the step that said “dip your peppermint patties into the chocolate, coating well on both sides”. There was no “dipping them in warm chocolate” because the peppermint fillings were soft and pliable and dipping them in the warm chocolate proved to be completely disastrous and impossible. I’ll start from the beginning… with the short list of ingredients {recipe link posted at bottom}

  • powdered sugar
  • peppermint extract
  • sweetened condensed milk
  • semi sweet chocolate chips
  • shortening

It started off fairly easy… with mixing the powdered sugar, condensed milk, and peppermint extract in the mixer… and I added 1 drop of red food coloring for a soft pink peppermint filling. I, of course, had a few eager helpers.

The peppermint filling was so good, I could have eaten it by the spoonful… and I might have eaten it by the spoonful. Then {with a clean spoon} I scooped a little out at a time, rolling it into 1″ balls and then pressing each one out to make a patty.

The directions said to let them dry for 2 hours, turning over after one.

After they dried for at least one hour I decided to cut a few hearts out, dipping my cookie cutter in powdered sugar…

After they all dried according to the directions, they were supposed to be ready to “dip” in chocolate. Oh, they were so wrong. You see these patties are soft and pliable. Dipping them in warm chocolate made them lose their shape and the chocolate {even with extra shortening added} was still too thick… so I resorted to my favorite tool in the kitchen. {I also dusted off the excess powdered sugar before coating in chocolate.} If I had been a good baker, I would have read the 93 recipe reviews first, many that suggested freezing the patties to make the dipping part easier, using a candy mold, or using “melting” chocolate from the baking aisle opposed to semi-sweet chips…  reading all of that before hand would have been really helpful.

But since I didn’t read any of that before I started my mini offset spatula saved the day… and parchment paper saved the day too. I always use parchment even when it calls for wax paper, which it did, but some reviewers said “don’t use wax, they stick” so if you try it, go with parchment.

Then I’d smear a little chocolate on the bottom of a patty and plop it down…

Then I’d doctor it up around the sides and top {so involved I forgot to take a pic}… definitely a little more time consuming than I had anticipated.  Then once they were all well coated I popped them in the fridge over night. They are great chilled or room temp! Involved? Yes. But, I will say this, they’re really good and even better than York Peppermint Patties!

Next time, yes, next time because there will be a next time I will do one or more of the following…

– freeze my patties before dipping
– use a candy mold
– make the filling into small little round balls like junior mints
– use melting bark chocolate made for candy making

    I have an absolute obsession with peppermint patties, junior mints, mint m&ms…anything chocolate and mint! I can’t wait to try this!

    And…I love some severe weather, too. A good hard rain on a dark and dreary day makes home glow all the more!

    I, too, have been living vicariously through my friends and family back in Illinois. Now that we live in Florida, I think it is really the anticipation of the storm that I miss the most. Love the first couple of days of snow, but also love that we were on the beach last Saturday!

    These patties look great. For super easy “thin mints” without the filling: chocolate, mint extract and…Ritz crackers!

    I found it hilarious that you like the “mild” kind of”severe” weather. Sounds like an oxymoron to me. The peppermint patties look yummy, but I dont know if I’d go through all that effort.

    You’re so funny, and sound so much like me! I had a similar experience with making a gingerbread house from scratch. I was ready to throw that darn thing out the window!     I LOVE severe weather too, as long as everyone is safe, it is so fun to “hunker down” and watch all the breaking news about it! We have 4 inches of snow on top of 2 inches of ice, here in west Texas, and the entire town has shut down for four days! It’s been grand!

    Hi Darby,
    Just reading your blog for the first time and noticed that you call your dad “daddy boy” … me too! My dad used to ask me and my sisters, “who’s your daddy boy?” and chase after us. He is also from Illinois. Do you know where this phrase came from? I think I’m going to call him and ask.

    Darby, I feel the same way about storms!! I survived the Blizzard of 2011 in Chicago and I liked every minute of it. Of course I don’t want people to get hurt or anything, but the anticipation before the storm, being glued to the TV for updates, having adult snow days from work and going into “survivor” mode made me quite happy. The peppermint patties look delicious! Always, always enjoy your posts 🙂

    The peppermint patties sound delicious! I have to admit that I’m a storm person too. And, Dad spent a few days working on his 4 wheeler recently before the snow hit so he could plow driveways easier. I still remember Mom telling him he needed to stay home when I was little (instead of trolling around town looking for people to rescue)! I remember being along for the ride though on some of those snowy days…it was always fun : )

    I always LOVED severe weather when I was back in Texas, too. I loved watching the Weather Channel, while we were all stuck indoors due to school and work being canceled. Perhaps if I lived in a place where we still had to go to school/work in bad weather, I wouldn’t like it as much. 🙂

    I can’t wait to try the peppermint patties. We are in central IL and got nearly a foot of snow/sleet. We are thankful the electricity stayed on. Pantries were well stocked and it was fun having our boys home for two days. The shoveling was not so fun…sore arms! Glad the sun is shining today.

    I confess that I didn’t read through all the comments, so sorry if this is redundant! I make peppermint patties every Christmas, but those pink ones are perfect for Valentine’s Day!

    I put my patties on a waxed-paper lined cookie sheet and pop them in the freezer for about 15 minutes. (I stick them in the freezer right after I make them…I don’t think you’d need to let them dry out for the 2 hours.) When they come out, I poke a toothpick into them to dunk them in the chocolate. I also mix my chocolate chips with some paraffin wax (2 cups chips to 1/2 block of wax). The wax helps the chocolate chips set up nicely after the fact, and I think the chocolate chips taste way better than the bark coating. Plus, the finished patties have a pretty, shiny look to them. 🙂

    I have found the whole process to be pretty simple this way…good luck!

    You would know that I have actually started a “eating program” translate that…diet…in the last few days, and of course this post just about did me in. I mean chocolate. It is one of my all time loves. My husband and I are both addicts, and he even hides his stash from me. But I know all of his hiding places so it doesn’t do him any good. These patties look divine, and I thank you for working all the kinks out in the recipe, although it looks as though it might be a while before I can make them. Oh, and snow?! No thank you, ma’am. I have watched the footage of Chicago with absolute horror. The only white stuff I want in my life is the sugar sand of the beaches of South Walton…can I get an Amen?!!!     Those look lovely! We make those for Christmas and most definitely freeze them for a good 1-2 hours. That way they do not melt or squish at all. Hope that helps:) They are SOO yummy!

    I like watching the weather on TV but NOT getting dressed and getting out in it! It’s much easier to throw on a sundress and a flop and head out. This Florida-bred girl is no good at real winter.

    I totally get what you mean about the weather, although we’re usually in “storm mode” more in the summer, during hurricane season. If there’s a hurricane brewing, we’ll leave the Weather Channel on all day! I sure would’ve loved to have hunkered down and hibernated today though…yucky weather! I love peppermint patties….may have to try these. The pink makes it even better. I’m a sucker for Valentine’s Day stuff!

    Darby, You are such an inspiration! I love that you make all of these random goodies, just because. Your children will have wonderful memories of that 🙂 I’ve tried to follow your lead and just the other night my 11 year old son and I whipped up a batch of homemade brownies from the Hershey cookbook he bought for me with his own money from his school book fair because he knows I collect cookbooks. I must be doing something right! Over the holiday we made your homemade cocoa and marshmallows…never buying another bag from the store and a while back I made your ginger snaps. Yum to all of them. Keep the recipes (and the inspiration) coming!

I am in Milwaukee, 1 hr North of Chicago and I couldn’t help but watching the news coverage and seeing the blowing storm outside! There was even lightening and thunder during the blizzard, weird huh?     I have made this recipe before and gave up on the “patties” as well. I noticed you suggested to roll them in balls and freeze them which is what I found works well but also if you stick a toothpick in the center before you freeze them this makes dipping a little easier too. The toothpick doesnt always stay still but you can still hold it sideways if that makes sense. Happy candy making!

    Darby – This recipe + your tips were awesome!! I made 2 batches this weekend and they were a huge hit with friends! Thanks for the inspiration and for all of the good advice. They were much easier to do when I put them in the freezer. I decided to tint mine yellow for the Super Bowl – too bad they weren’t a good luck charm!     1. Because I too love severe weather. My husband and I waited out the blizzard in Chicago and I excitedly told him that I thought this qualified us as STORM CHASERS because we experienced the biggest snow storm in Chicago in 30 years, and then when we lived in Houston for a year we waited out Hurricane Ike! He thought I was being silly but I def think this qualifies us.
    2. Pink. Peppermint. Patties. OMGosh, you knooowwww this is right up my alley. AND now that I am preggo I have zero qualms about making a whole batch just for myself.
