Maybe you’re not into sewing… so here’s a post if you’re into eating.
I hope you all are overflowing with squash and zucchini, if you’re not, pick some up because this is a delightful and easy recipe!
This is what you’ll need {+ chicken breasts}:

IMG_7326

Cut up squash and zucchini. Season chicken breasts with Jane’s Krazy and place each chicken breast on a large square of aluminum foil {one breast per square} and place sliced squash and zucchini over top. Also, I think cherry tomatoes would also be delicious cut up and put on top with those squash and zucchini.

IMG_7327

Then douse it with some store bought marinara {or make your own if you have time}.

IMG_7328

Then comes the good stuff: mozzerella & parmesan.

IMG_7330

Wrap it up in the foil and be sure to seal any cracks. But try to avoid wrapping it too tight, you’ll want to leave a little space between the cheese and the foil because you will be really sad if you have to scrape all your cheese off your foil.

IMG_7331

Bake at 350 for 35-45 minutes.

While I prepared it this is what was going on beneath my feet.

IMG_7335

Hopefully this won’t happen while you make yours.

I cleaned up his mess and while it baked he made his way to see his sisters {who were working on a giant mess of their own}.

IMG_7336

He wanted to pull up a chair so bad he could hardly stand it. And I could hardly stand it myself.

IMG_7344

He tried so hard to reach the paint.

IMG_7343

But thankfully {for my sake} he couldn’t.

Then dinner was ready.

IMG_7347

And we all inhaled it.

If you’re classy you’ll probably want to remove the chicken and all it’s goodies from the foil. But if you’re feeding a pack of wolves they won’t mind eating off the foil.

Enjoy!

Awesome – what a tasty way to get in good veggies – Do you know how many times my kitchen looks EXACTLY like that – combine all the zip lock bags with the cabinet that holds all the bottles, sippy cups and child plates – zip lock bags are fun to play with – I learned early on with Wilson to put the aluminum foil up HIGH HIGH – it's hard to get it back rolled up plus it has a super sharp edge!!! Thanks for sharing!!!

    Hi Darby!
I've been enjoying your blog for a long time but I think this might be the first time I've commented! It's just gotten too ridiculous, and so I have to tell you… you have GOT to stop posting pictures of your adorable children. It's too much for me! My husband and I are trying to wait at least a year until we start trying for children, and visiting your blog makes it way too hard! I don't know if I've ever seen more adorable kiddos. (But seriously, keep up the good work :) )

and as always, i'd slurp "them thar chirrun" too! happy weekend! we are having a girly party and wish we lived close enough to invite yall. only 11 more for JM!!

  • Comment by The Rauths — June 19, 2009 @ 10:46 am

i love the photo of jm with on his tippie toes!

i made this exact thing a few weeks back (took the hard route and used homemade marinara and used a different chicken seasoning) to take to the hollywood bowl with us. it was delicious — and i did add sweet grape tomatoes. i served with some sliced bread and everyone had their meal in a foil bowl. delicious!

looking at your photos got me thinking though…how great would this be for camping? add some thick potato slices at the bottom and wrap it all up…toss it on the fire and you are good to go!

    Darby-
EVERY.SINGLE.ONE. of your recipes are SO easy, SO good I can hardly stand it. You need to seriously consider writing a book on homemaking of sorts – crafts, recipes, sewing etc. I'm serious. I would totally buy it.
I'm making this this week. Can't wait.

  • Comment by mom2three — June 22, 2009 @ 6:49 am

for anyone who is worried about the cheese getting stuck to the foil (which would mean I couldn't possibly eat mine…) another way to do it is to layer the cheese first then the sauce on top of all.
    Thanks for the great recipe!

This was SO delicious. I made it for my family tonight. My son is a super fussy eater and he gobbled it all up. I'm a veggie so I just piled in the zucchini, a little capsicum (you call it bell pepper. I think) and some cherry tomatoes. A really happy family!

    Thanks so much Darby!
