In times past I’ve told you not to trust me… and I’ve done it again. The curry chicken salad recipe I posted called for 1 1/2 teaspoons of salt… that is way too much salt! I’ve never been good at following recipes to a T and I overlooked the fact that the pre-modified recipe called for that much because I always “salt & pepper” to taste. I have edited the recipe and I apologize if any of you followed the original recipe! It also said 1 1/2 T of curry powder, which I can’t recall but I don’t think I ever put that much in. Maybe I did. I just can’t remember. Y’all, I should not share recipes if I can’t get them straight, should I? I’ll make it again and let you know for sure how much curry I put in. If I were you, I’d start with 1 tsp and add until you like the “curry-ness” of it.

We’ve been soaking up summer and I have this feeling it’s coming to a rapid end! Lots of swimming, playing with friends and for me, trying to get my ducks all in a row before we head back to the coast. Here are a few camera phone snapshots from recent weeks…

And more important than all that stuff… Mom is here! It’s hard to say who’s more thrilled the kids or me! We’re headed down to McBeach soon and the kids have been packing for 2 weeks… which means we have way more than we’ll ever need!

    Even though I know your Rover is not peeing in the fridge, I swear your Rover has a typical male “peeing pose”. They all seem to have that profile from the rear as they “go”!

    oh, what sweet pics! The pic of Rover with his cars lined up and naked peeking in the fridge so reminds me of my little guy. I’m about a year ahead of you (2 girls – almost 8 & 6 and my little guy is 3). Ok, he’ll be 4 in Nov but I REFUSE to admit that! He’s my baby and our little ham as JM appears to be too!     I have to tell you. The naked hiney in the fridge. My favorite picture ever. EVER. I have 2 boys (4 & 22mo) We always have naked bums around here, but there is something about rover hanging out in the fridge, 4 or 40 he’s looking for somthing to eat! Glad you are enjoying your summer!

    Darby: I swear I don’t know how you do everything you do with the t-shirts and three kids. You are an inspiration. I love your blog and the adorable pictures.     I made both of your recipes and they were AWESOME! I didn’t put that much salt in…just added to taste like you said. I did put 1 1/2 T of curry in and I loved it! Pretty kicky, but I’ve practically eaten the whole bowl myself in 2 days. πŸ™‚

    I made the curry chicken recipe and it’s awesome! Even doubled the batch and gave some to a sweet friend. I just salt and peppered to taste, so no worries. The only thing I might do differently next time is cut up the chicken into cubes instead of shred it. Next up PB krispies!

    Rover is so adorable. Reminds me of hilarious memories with my brother when we lived in Trinidad. He is now 32, but at Rover’s age was always removing his clothes.

    Your recipe measurement description reminds me of my mom. She is so funny, I’ll say “how much flour?” and she’ll say, “oh, Laura, you know, just a little bit!” A little bit, a tad, a handful are all measurements she uses! πŸ™‚

    darby..i have to tell you how much my (almost) 3yr old loves his honey bee ts! he has 3 and they are always the first worn out of the wash. tonight he insisted on sleeping in his green tractor t shirt. i think they get better with each wash too. now if only you had one with a lawn mower…he has a slight lawn equipment obsession. xo

    On the subject of Honey Bee tees, I was wondering if it would be possible for you to restock the adult Off to the Bay long sleeve in an XL or make the Canoe Ride shirt available in adult sizes?     Oh give her some slack —the first month of school is as maddening as the last month of school LOL. Is she a room mom– a PTA volunteer, shelving books in the media center, Capturing photos for the school year book blogging for the PTA too?? Designing bulletin boards, counting boxtops or soup labels, helping out of the special day of the week, selling school t shirts, selling year books, selling candles, baking cookies for a bake sale, sewing clothes for the girls sounds to me there are plenty of things to spend one’s time …..     I tried the rice krispie treats above with natural peanut butter – the creamy kind with nothing added (no salt/sugar/oil) and they were NOT good. They were really dry & crumbly. My friend found a v. good recipe on the Whole Foods website though that has raisins & nuts. I tried hers and it was way tastier!
