Hello patient blog readers. I apologize for my absence. I’ve been making ice cream, cleaning my house, watching tee ball games, reading, and hanging out with the rovers. {BTW they are hardly amused with Darby Doll, in fact, after the picture below was taken my little Warrior grabbed me by my leg and threw me on the floor! The audacity!}

Before I start on my post I feel the need to do a little housekeeping. Ashley’s awesome kitchen is painted WEEKEND GETAWAY by Benjamin Moore. Her beautiful CHOCOLAT print that is framed above her open shelves is from the Pottery Barn outlet, but she says it’s been a while, so good luck hunters!

And… let’s chat for a second about the fruit roll-ups. I’ve heard of several failed attempts. First, 170° is fine if that’s as low as your oven will go and it will still likely take just as long to bake/dehydrate.  Depending on how long it takes your fruit to reduce and how thick it is as a result and depending on how thick you spread it on your parchment will all play a factor into how long it will take to cook. It could take up to 12 hours. If you pull it out and it seems to be sticky on top but firm, it is likely done already. You can take paper towels and blot the stickiness off the top before you roll it up. If it’s still squishy in some places and not firm like a fruit roll up, it’s not done yet. Put it back in the oven and let it bake until it’s no longer squishy.

And I’m suffering from what I call email debt, thanks for your patience as I slowly pay it off.

I will quickly remind the male readers, who also play the role of father, don’t forget your babies’ mommies this weekend {or your own mommy}. And if you’re at a complete loss… this magazine would be a fun treat for either of them! I believe the reason I love it so is because it’s super glossy, completely advertisement free, and chocked full of recipes, tips, and hints!

So… the ice cream claimed to be “ice cream maker-free” and since we used to have 3 ice cream makers and currently have zero, it was right up my alley! In place of the ice cream maker it called for heavy whipping cream and sweetened condensed milk. Have y’all ever made ice cream this way? Let me tell you, it’s super easy and as the Raiger would say, “it’s way GOOD!”

FYI: One quart of heavy whipping cream will yield enough “whipped cream” to make 3 quarts of ice cream. With my quart of heavy cream I made chocolate {left}, vanilla {center}, and mocha {right}!

My favorite being the mocha. It was just going to be coffee and I got a little crazy and squirted some Hershey’s syrup in with it and I’m so glad I did.

And the chocolate really made the coffee flavor come to life.

In a nutshell, you whip heavy cream to stiff peaks and add it to a mixture of condensed milk, sour cream, vanilla and to that, if you choose, you can add coffee and chocolate!

You start by gently whisking a little of the whipped cream in and then gently fold the rest of the whipped cream in and it will leave you with a yummy, creamy, and smooth non-frozen ice cream. Then you contain it, try to keep your fingers out and then you freeze it and      w   a   i    t .

About 6 hours later you call your fairy princesses away from their toy-tornado-destroyed bedroom, let them put their grimy feet on the counter and have a taste !

But be sure to leave the mocha one in the freezer simply because you won’t want to share it with little fairy princesses!

The verdict: We LOVED the chocolate and mocha. I didn’t so much love the vanilla. I didn’t follow their directions entirely {I couldn’t find the Ghiradelli white chocolate they recommended so I omitted}. It’s likely my own fault but it wasn’t as smooth as the chocolate and mocha and tried to crumble as I scooped it out with the ice cream scoop. Again, could be my own fault for likely omitting an essential ingredient! But… the mocha and chocolate… mmmm!! Smooth and delicious.

Here’s their website. You have to subscribe to get the Magic Vanilla Ice Cream recipe but I made enough modifications to post my own version of the chocolate and mocha…

Yields: 1 quart
Ingredients:
1/2 cup sweetened condensed milk
1 teaspoon of vanilla extract
pinch of salt
1/4 cup of sour cream
1 1/4 cups of heavy cream

Mix condensed milk, vanilla, salt and sour cream until well combined.  To it add…

for CHOCOLATE variation: add 5-6 tablespoons {or more to your liking} of chocolate syrup

for MOCHA variation:  mix 1 heaping teaspoon of instant coffee powder with 1 tablespoon of boiling water. Add instant coffee mixture, along with a generous squirt of chocolate syrup to the condensed milk mixture

Mix your heavy whipping cream on high {it would love a cold bowl and cold whisk too} until stiff peeks form {3 or so minutes}. Whisk some of the whipped cream into the condensed milk mixture until incorporated and then gently fold the rest of the whipped cream in. Place in an airtight container and freeze 6 hours before serving!

Next I’m trying chocolate malt! I’ll let you know how it goes!

    my family has one of the big ones from the 70s–takes forever and is messy–and i have one that attaches to my kitchenaid–that takes a long time to prep. i love this idea!

    You read my mind with the decaf coffee! I have been searching for a decaf coffee ice cream in the stores but it does not exist! I am a true fan of coffee Oreo ice cream… yes, you should try that variation with your coffee (or mocha) recipe. I’ve never made it myself but I assume all you do is pull the Oreos apart, crumble and toss into the ice cream. It is amazing if you’ve never tried it! Enjoy!

We will definitely have to try it out this weekend for mother’s day. and thanks for the tips on the fruit leather. i’m going to try again this afternoon.it took me over 5 hours to get it the right consistency the first time. my neighbor didn’t have this problem, so i’m going to borrow her pot. where did you find the magazine? it looks amazing!!!!

    Darby you crack me up, geriat! BTW chcolate also has a good amt of caffeine so the way I see it, I’m not giving up coffee EVER and it’s against the law to give up chocolate so I guess I’m gonna have lots of late nights!

    “Cooks” is terrific and the photos are what caught my eye.

    Please have Darby doll wear a coat the next time she hangs out in the freezer!

    Darby. I LOVE your blog. I am a total addict to it. I will def. be making this homemade ice cream! When I was in 4th grade we made homemade ice cream in class. No idea how we made it, I just remember rolling a huge coffee can on the floor back and forth for 2 hours. HAHA beat class thats for sure!

    I want the ice cream NOW!!!! I can’t wait to try it. How do you find all these great recipes- I’m so glad you do because then I don’t have to look for them. I mean I didn’t even know I was craving making ice cream a few minutes ago:) Anyway, I’m so glad others had a hard time with the fruit roll ups. I’m going strawberry picking next week and I’m planning to try again. It hasn’t stopped me from recommending the recipe to others.     A dear friend of mine who is several years older recommended this magazine to me and I’ve gotten a few issues. I need to check it out again! I was just reading an issue of…Woman’s Day, I think?… that talked about homemade ice cream. I told my husband we needed to go out and buy the machine pronto.

    He said, “Uh-huh” and promptly went back to watching Sportscenter. So happy to know I can do this without the machine! woot!

    I’ve been reading your blog for a while now, but this is my first time to comment! I always get so excited when you post new recipes or projects! My husband and I have spent the past two evenings picking dewberries, and we’re up to our eyeballs in them!     I have been working on finding new traditions for me and my kidos to start. Here’s he first!

    Friday morning before mothers day- i go to super walmart. While parking in the parking spot furthest from the door (to proactively burn the calories to be replaced by lots of ice cream), I ponder who on earth thought to put sour cream in ice cream for the first time…decide to imagine it was me. :) buy some yummy extra ingredients to put in the ice cream, something different each year (sneak a peek at Ben & Jerry for some ideas).

    Friday afternoon- dust off big red kitchen aid mixer that I’ve only used once and honestly didn’t know what to do with that particular attachment shown in the picture of your post. Whipping. I can’t wait.

    Saturaday morning- make homemade pancakes with at least one ingrdient I purchased for ice cream.

    Saturaday afternoon- grab the kids and make ice cream. Eat left over pancakes for dinner.

    Saturaday night- let them chill. Kids and I required to do the same while thinking of really fun, funky names for the flavors we’ve created.

    Midnight- secretly try ice cream before bed.

    Mothers day morning- enjoy ice cream for breakfast with kids.

    I make homemade vanilla bean in my ice cream maker. It is so easy.

    I LOVE this magazine. It is beautiful and has the best recipes.

    Thank you for the ice cream recipe! I love homemade ice cream but no longer have an ice cream machine so I’m so excited to try this recipe out over the weekend. And I’m glad I’m not the only one who had problems with the fruit roll-ups! You made it sound so easy but mine were a disaster. After 3 hours of reducing mine still weren’t the right consistency and I was sure I had messed up somewhere along the way. I’ll try again…but on a weekend when I have more time and patience!

    I am so excited that you posted this recipe – I have been wanting to make home made ice cream for a while now, but like you, I have no ice cream maker. And I did not want another large contraption in my kitchen :) haha. I made the three versions and they turned out well except my mocha turned out like your vanilla. I had to put less sweetened condensed milk in the mocha b/c I ran out and am wondering if that is what caused the difference…?

    I just made all the same ice cream you did and added one of my own….stawberry. Just added fresh mashed strawberries + about 1/4 confectioners sugar to the vanilla version…it might be my favorite – or a tie with the mocha….

    One question, I am a being a pest here but I wondered what color Ashley used to paint her living room? I painted my dining room Weekend Getaway and I’m having the hardest time committing to a complementing color for the living room. Hers is lovely and I would so appreciate the help!

    If you want to put the original recipe up from Cook’s Illustrated or Cook’s Country magazines/websites, you can contact the magazine directly and they can give you permission to post without any hassle. Back when I had a blog, I emailed them and they were very gracious in granting permission to repost their recipes (I just had to write “posted with permission” with a link back to their site). I think it was something like 5 recipes/month without getting any further approval once we emailed back and forth the first time.

    Before I finished reading your post I thought to myself, “I wonder how malt would work.” Did you try the malt yet? Sounds like I’ll be trying all of your three suggestions (if I can find the white chocolate) plus malt over Labor Day.

    Long post to clarify about the white chocolate, etc.

    This recipe was on cooksillustrated.com as well as being in Cook’s Country and was a big hit with my company and an informal tasting panel, served with small not-very-sweet cookies. In one taste test I made ice cream sandwiches with store bought cookies and everyone liked them very much.

    For the vanilla ice cream the CI recipe which varies very little from this one posted here otherwise, calls for 1 ounce of white chocolate, melted with the condensed milk before stirring in the sour cream and vanilla, then cooling before stirring in part of the cream that has been whipped to soft to firm peaks, then the rest of it.

    The white chocolate is essential for creaminess and smoothness. I taste tested Baker’s white chocolate and Ghiradelli’s white chocolate and Baker’s was noticeably more artificially sweet tasting.

    The sour cream off-sets the sweetness of both the white chocolate and the condensed milk and does not impart any specific taste. I used up to 1/3 cup with success.

    The CI recipe calls for 1 TBS of vanilla. I made it with the 1 TBS and with about half of that (about 1 1/4 tsp.) We liked the full TBS, but that was just my taste group’s preference.

    Expect some people to need something to wash down the sweet dairy taste. Most people requested coffee, tea or a glass of water.

    Children are bound to love it and since they can make it themselves it’s a great idea.

    Cook’s Illustrated is tremendous for this kind of creativity!
