Let’s Go for a Walk

November is here, can you all believe it? I certainly can’t. And my baby turns 5 today, I can’t believe that either!     hi darby! i LOVE your blog! i gain so much insight and inspiration from you! i thought the least i could do is give you my staple fall/winter recipe. i know you like quick and good recipes! 😉

    Slow Cooker Chicken Taco Soup


    1 onion, chopped
    1 can pinto beans
    1 can black beans
    1 can whole kernel corn, drained
    1 (8 ounce) can tomato sauce
    1 (10 ounce) can diced tomatoes with green chilies
    1 (1.25 ounce) package taco seasoning
    3 whole skinless, boneless chicken breasts
    shredded Cheddar cheese (optional)
    sour cream (optional)
    tortilla chips or Fritos Scoops (optional)


    Place the onion, pinto beans, black beans, corn, tomato sauce and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
    Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and tortilla chips or Fritos, if desired.

    my little guy’s 5th birthday was today too! up until a month ago he was the baby of the family (with two older siblings)and a lot of the stuff john martin does reminds me of hudson and makes me laugh! these sweet boy are going to give us premature gray hair! good thing they are so precious and completely adorable! we refer to hud as “hudson the handful”…however hornet and rover would fit also!
